Sausage is one of the most popular toppings for pizza, but not all sausage is the same. Here’s a look at three types of Italian sausage.
Hot Italian Sausage
The reason so many people love sausage on their pizza is its bold flavor. You won’t find an Italian sausage with a bolder flavor than the hot variety. To create this bold and spicy flavor profile, it uses garlic, fennel seeds, red pepper flakes, and paprika. Some varieties include other ingredients to add extra spice, but most at least use red pepper flakes and paprika.
Classic Italian Sausage
Stepping down a notch on the Italian Sausage Spiciness Scale, we have classic Italian sausage. Although not as spicy, this is still a well-seasoned sausage with a robust flavor. These sausages contain garlic and fennel seeds and round out the flavor with herbs and black pepper. Overall, classic Italian sausage is more aromatic than hot sausage as well as having a milder flavor.
Sweet Italian Sausage
Finally, we have sweet sausage. This sausage is not seasoned with pepper of any kind, allowing the sweeter flavors to come through. It has a subtler and more delicate flavor than its spicier counterparts, so it is easy for it to get overwhelmed by other toppings. Sweet sausage is ideal for white pizzas or pizzas with lighter sauces so the delicate flavors can shine through.
