Let’s talk about crust.
One of the most noticeable differences between Italian and New York-style pizza is the crust. Italian pizza has a thin, crispy crust often cooked in a wood-fired oven. The dough is typically made with flour, water, yeast, and salt and is left to rise for at least 24 hours. This slow fermentation process gives the dough its distinct flavor and texture. On the other hand, New York-style pizza has a thicker, chewy crust that is often baked in a gas oven. The dough for New York-style pizza is typically made with a higher protein flour and may also include sugar and oil, which gives it a slightly sweeter taste. While the dough may not have the same depth of flavor as Italian pizza, it is still delicious and provides a sturdy base for the toppings.
